perfect summer treat!

These gluten-free, vegan chocolate chip ice cream sandwiches are great to make ahead of time to always have in the freezer when you’re craving something delicious and healthy, or to serve at your next backyard barbecue with friends.

It’s creamy vanilla ice cream, sandwiched between two chocolate chip cookies. This gluten-free vegan dessert is the perfect summer treat!

Ingredients

  • Vegan Ice Cream
  • 2 cups vegan milk of choice

  • 1 cup sugar

  • 1 cup vegan whipping cream, cold from the refrigerator

  • 1 teaspoon pure vanilla extract

  • Vegan Chocolate Chip Cookies
  • 1 cup white, oat, or spelt flour

  • 1⁄2 teaspoon baking soda

  • 1⁄4 teaspoon salt

  • 1⁄4 cup sugar

  • 1⁄4 cup brown sugar or coconut sugar

  • 1⁄3 cup chocolate chips

  • 2 tablespoons vegan milk of choice, (plus more if needed)

  • 2 tablespoons oil or vegan butter, melted

  • 1⁄4 teaspoon pure vanilla extract

Directions

  • Vegan Ice Cream
  • Start by making the condensed milk. Combine milk and sugar in a small saucepan and bring to a boil. Lower the heat and let simmer for about 30–40 minutes, stirring every few minutes until the mixture is reduced by half. Remove the pan from the heat and set aside to cool completely. It will still be fairly thin at first, but as it cools, it will thicken up nicely.
  • Add vegan whipping cream to a large bowl. Whip with an electric hand mixer at medium-high speed until you have a firm and frothy mixture.
  • Add condensed milk and vanilla to the bowl and mix well, stirring slowly with a spoon, from bottom to top.
  • Pour the mixture into a freezer-safe container and place in the freezer until solidified (at least 4 hours).
  • Vegan Chocolate Chip Cookies
  • Combine all dry ingredients in a bowl, then stir in wet ingredients to form the dough. Stir until a doughy texture is achieved. You can always add small amounts of extra milk as needed!
  • Form dough into a ball and freeze until the dough is cold.
  • Once dough is cold, preheat your oven to 325 F.
  • Form the dough into 1″ balls and place 2 inches apart on a parchment lined baking tray.
  • Bake approximately 11 minutes on the center rack. They may look underdone when you first take them out. Let cookies cool on the baking tray at least 5 minutes before touching, during which time they will firm up.
  • Place cookies in the freezer until frozen, before assembling your ice cream sandwiches. It will make them so much easier to assemble.
  • Assembling the Sandwich
  • Turn one cookie over and add a large scoop of ice cream to the bottom. Place another cookie on top of the ice cream. Press until the ice cream reaches the edge of the cookie. Repeat with the remaining cookies.
  • Enjoy your ice cream sandwiches right away, or wrap them in plastic wrap and store in a large ziplock bag in the freezer until you’re ready to enjoy.
