This is one of my favorite meals – breakfast or anytime! I do my best to use local ingredients. We have some happy local chickens that provide wonderful eggs and other than the tortilla, it depends on what growing season we are in as to how local I can be with the rest of the ingredients.
Ingredients (per serving):
Olive oil spray
Whole grain or sprouted grain tortilla
Cheddar cheese or mexican cheese mix
Refried beans (optional)
Tabasco Chipotle Pepper Sauce or your favorite hot sauce (but this smokey special tabasco is my secret flavor ingredient
2 Eggs
Fresh cilantro
Preheat oven to 400 degrees. Spray a cookie sheet with olive oil. Put the tortilla on the cookie sheet and spray the side facing up lightly. Cover the tortilla with a layer of refried beans (if you are using them). Then spread a layer of shredded cheese. Place in oven and cook for 6 – 7 minutes or until edges of tortilla begin to brown.
Fry eggs as desired (mine are usually over medium).
Place eggs on top of tortilla and cheese. Drizzle the chipotle tabasco to taste and sprinkle on chopped cilantro.

MMM Juevos Rancheros are also super good if you ad some beans to the mix and sour cream and salsa!
