We love a good green juice recipe around here, but juicers can be pretty pricey. This is sort of a cheater’s green juice recipe, and you can make it in your regular blender!
Green juice makes a great on-the-go snack alternative to wasteful packaged foods. It’s healthy, quick, and simple to make. You don’t need a fancy pants high speed blender to make this juice. The blender I use is one that cost $25 back in 2006. I think we got it as a wedding present. I’ve put this blender through the ringer, so if I can make this in mine, chances are your blender is also up to the task.
The other thing I like about making “juice” in the blender like this is that unlike with a juicer, you don’t lose that healthy fiber. When you properly juice kale, you lose so much of the goods! Blending it into your drink changes the texture a bit, but the health benefits are well worth it, in my opinion. Don’t worry though – this isn’t a thick drink at all. The water thins it out, and if you want it even thinner, you can add more water until it gets to the consistency you want.
Kale-mato Green Juice
Yield: 2 servings
Ingredients
- 1 cup tomato juice
- 1 cup kale, chopped
- 1/2 cup water
- juice of 2 lemons
- 1 teaspoon soy sauce (optional)
- 2 cloves garlic, minced
- hot sauce, to taste
Method
- Toss all of your ingredients into the blender, and blend until smooth. You’ll want to do a good, thorough job blending to make sure the kale gets as incorporated as possible.
- Chill until you’re ready to drink. If it sits, you’ll need to stir or shake it up before serving.
