Who doesn’t love a good quinoa recipe, right? This honey-soaked version adds a little sweetness to this healthy grain.
This gluten free, vegetarian recipe is easy as pie to veganize. Just use maple syrup or agave nectar in place of the honey for a vegan version. It combines chewy quinoa with a hint of sweet and you get a nice crunch (and protein punch!) from the peanuts. It makes a great side dish, and you can even serve it up as the main course.

To make this simple quinoa salad, you need:
- 1 1/2 cups uncooked quinoa
- 1 Tbsp. honey
- 1/3 cup fresh cilantro leaves, finely chopped
- 1/3 cup salted peanuts
- 3 Tbsp. freshly squeezed orange juice
- 2 Tbsp. fresh orange zest
- 2 scallions, thinly sliced
- 1/4 tsp. sea salt
- 1/4 tsp. freshly ground pepper
