This Roasted Squash Recipe is Quick, Simple, and Versatile

Editor’s note: This dish from our sister site Vibrant Wellness Journal is my favorite roasted squash recipe ever. The ingredients list in the original recipe calls for kabocha pumpkin, but I’ve used it with acorn squash without any problems. I’ve also made it without the brown sugar, and it’s delicious either way. This roasted squash is a staple in my kitchen, and I’m so thrilled to share it here!

Vegan Recipe: Smoky Chipotle Black Bean Hummus

I admit it: I have a hummus problem. I used to have it under control, back in the Olden Times when I thought it was only about the chickpeas. Once I understood the breadth and depth of this particular canvas, though, things got a bit more (deliciously) complicated! This recipe features black beans, cilantro, chipotle and lime, for a spicy Southwestern twist on a classic vegan favorite — because chickpeas shouldn’t get to have all the fun.

Topeka! I have found it! I know I’m not the only veg-head who cringes at the thought of supporting animal agribusiness when my pill-averse pup needs medication. ‘Just put it in a hot dog, or some cheese,’ says the vet. Well I’d really rather not, actually! Since my heathen hound has mastered the art of external peanut butter removal, towards the apparent goal of leaving very clean and slightly dissolved-at-the-edges pills on my floor, I had to find a better way. Try this easy vegan recipe for pill-pockets your canine friend will happily wolf down — with no hot dogs or dairy junk anywhere nearby!

Vegan Recipe: Nutty Power-Snackers

When you’re operating outside your normal kitchen habits — maybe on a long road trip, or spending the weekend with omni inlaws, or (egads and GRR!) trying to eat well in a markedly un-vegan hospital-type setting — quick and easy nutrient-dense food is a must! This vegan recipe fits the bill when you need real food real fast, and don’t have the time or supplies for full-meal food-prep. Pre-made and stored in airtight bags or containers, these raw crackers keep for several weeks… I’m not sure exactly how long, since my family keeps eating them all up. But anyway: enjoy!
