When researchers at Tufts University analyzed 60 fruits and vegetables for their antioxidant capacity, blueberries came out on top.
This wonderful little superfood is not only delicious, but also packed with phytonutrients that help neutralize free radical damage in the body.
Here is a simple and delicious recipe to help include more blueberries in your diet:
(This recipe is easily made vegan by substituting vegan margarine for the butter, soymilk for the milk, and making sure to use vegan sugar.)
Lemon Blueberry Scones
- 1 1/2 cups whole wheat pastry flour
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1/2 cup butter, softened
- zest of 1 lemon
- 1/2 cup milk
- 3/4 cup fresh blueberries
In a large bowl, whisk flour, baking soda, baking powder, salt, and sugar to combine. Add zest, berries, milk, and butter. Mix well, (using your hands to mix is easiest).
Form dough into 6 to 8 rounds and flatten slightly. Place on a parchment lined baking sheet, (if desired, brush with milk, and top with a sprinkle of sugar.)
Bake in a preheated 400 degree oven for 13-15 minutes or until golden.
