Tofu Coconut Curry
Ingredients
- ¾ C garbanzo beans
- 3 oz tofu
- 1 bell pepper, chopped
- ¼ large onion, chopped
- /2 tsp coconut oil
- ½ C coconut milk
- Curry powder
- Dried basil
Directions
- Combine coconut milk. curry powder, and dried basil in a medium saucepan and bring to a boil.
- Add garbanzo beans and tofu and reduce heat to a simmer.
- In a separate pan, stir fry bell pepper and onion in coconut oil until tender.
- Add vegetable to curry mixture and continue to let simmer for 1-2 hours.

The recipe sounds interesting. I don’t think I would every have a combination of coconut and tofu together in curry. I wonder how this would taste like.
