A twist of Mexican for a good lunch.
Avocado Quesadillas
Calories per serving: about 500
Ingredients
- 1/4 extra firm tofu
- 4 corn tortillas ( white or yellow)
- 1/2 avocado
- 12 grape tomatoes
- 1 garlic clove minced
- 1 tsp lemon juice
Cooking Directions
- Blend all except the tortillas in a food processor.
- Pour a little oil in a pan and heat to fry the tortillas.
- Throw tortilla in and sit for 10 seconds, flip, then add a bit of the mixture into one half of the tortilla.
- Fold over tortilla and flip for about 5 more seconds.
- Repeat for all 4.
- Serve and garnish as you please. I like adding the “melty cheese” recipe inside while cooking. That gives it plenty of flavor.

Awesome and simple recipe. To add to this, I usually just microwave those frozen chicken nuggets (make sure its white meat), then I take it and cut into small slices, add that to these quesadillas, and you have an awesome lunch.
I’d like to try this recipe, but I’m not sure what to make of the quantity of tofu.
