Reader Recipe: Avocado Quesadillas

A twist of Mexican for a good lunch.

Avocado Quesadillas

Calories per serving: about 500

Ingredients

  • 1/4 extra firm tofu
  • 4 corn tortillas ( white or yellow)
  • 1/2 avocado
  • 12 grape tomatoes
  • 1 garlic clove minced
  • 1 tsp lemon juice

Cooking Directions

  1. Blend all except the tortillas in a food processor.
  2. Pour a little oil in a pan and heat to fry the tortillas.
  3. Throw tortilla in and sit for 10 seconds, flip, then add a bit of the mixture into one half of the tortilla.
  4. Fold over tortilla and flip for about 5 more seconds.
  5. Repeat for all 4.
  6. Serve and garnish as you please. I like adding the “melty cheese” recipe inside while cooking. That gives it plenty of flavor.

  1. Awesome and simple recipe. To add to this, I usually just microwave those frozen chicken nuggets (make sure its white meat), then I take it and cut into small slices, add that to these quesadillas, and you have an awesome lunch.
