  • a smoothie with juice or almond milk

Vegan Lunch Ideas

  • avocado sandwich with arugula, onion, and tomato
  • veggie wrap with hummus
  • black bean burger with sweet potato fries
  • lentil soup and a veggie samosa

Vegan Dinner Ideas

  • stir fried veggies with nuts or tofu over rice or noodles
  • pasta primavera
  • baked potato topped with sauteed beans and veggies
  • three bean chili

Of course, these are just a jumping off point, and I tried to stick mainly with simple food that you may even already be eating. There’s a whole world of tasty vegan recipes out there! If you start to feel like your vegan cooking is in a rut, handle it just like you would any other cooking rut: pick up a vegan cookbook for some recipe inspiration!
