What’s Your Favorite Lunch? Comment and Win!

My husband says that figuring out what he’s going to pack in his lunch is one of the most frustrating parts of his day.  Me?  I have no problem packing up last nights leftovers, adding a piece of fruit, some carrots or other portable veggies, and possibly a treat.  In fact, when I make my favorite meals, I always think about leftovers for lunch.   I long ago abandoned actual brown bags; I almost always use some type of reusable cloth bag with reusable containers and silverware.  I’d been coveting a stylish reusable lunch container for quite some time, but passed on buying one, citing it as something I didn’t really need.

So when the folks at Healthy Kitchenware sent me a stainless steel food carrier for a product review, and offered one for a reader, I jumped on the opportunity.  The containers are all steel, no plastic, are compact, easily portable, and have three separate compartments that join together with a latch.  It’s the perfect size for a small salad, sandwich, and a treat, each in its own compartment.

  1. Ham, cheese, cream cheese, sunflower seeds, lettuce all on an “everything” wheat bagel. Throw in some carrots and ranch dip, as well as some yogurt and I’m a happy camper.

  2. I literally have the same lunch everyday. Vegetarian jalepeno and cheese hot dogs, wrapped in a whole wheat tortilla with diced cherry peppers. I’m so predictable it is sad. LOL. I throw it all in a bulky old tuperware container.

  3. I love to mix up a big tasty salad for lunch — I mix in whatever veggies I have in the house (cucumbers, roasted red peppers, artichokes, tomatoes, carrots, broccoli, etc.) and top it with a sprinkling of salad dressing and some freshly ground pepper.

  4. I fix lunches for my wife every workday, Mon thru Fri. One of our favorites is a sping mix salad (arugula, spinach, etc) with a citrus dressing that I make. I also include on the side: mandarin orange slices for the salad and/or snack, granola bar, in-season fruit and homebrewed iced tea.

    Her friends at work are jealous.

  5. My lunch is almost always last nights leftovers. If I have nothing already fixed and ready to go, lunch is a chunk of cheese and crackers with a handful of nuts on the side.

  6. i usually take leftovers, my favorite is an herb beef stew that’s perfect for chilly winter days (or arctic office air conditioning in the summer). i usually throw in some fruit, yogurt, and granola bar for snacks.

  7. My wife makes me a lunch most days. I always have raw carrots and sugar snap peas; two pieces of fruit (one for morning snack and one either with lunch or as an afternoon snack); and a sandwich of some kind on whole wheat bread. sometimes she throws in a few small cookies (Nilla Waffers or the like) as a dessert.

  8. My lunch is pretty much the same every day: veggie mayo, broccoli sprouts, sunflower sprouts on flat bread. Sprinkled with sun dried tomatoes and sunflower seeds. YUMMY!

  9. I eat lunch at home, so I eat leftovers from last night’s dinner 95% of the time…I try to make enough at night for two dinners (DH and I) and two lunches. DH uses Gladware. Not exactly the most ecologically responsible, but they last a VERY long time and then they go in the recycling bin!

I like a croissant spread one side with mashed avocado and one side spread with quark (plain yogurt drained until all the whey is dripped out and you are left with the consistency of soft butter or cream cheese. You can also keep the drained off whey for baking) and thin tomato slices in the middle. It makes a great light and healthy sandwich.

A lot of leftovers end up in my lunch: couscous or brown rice mixed with sunflower seeds, assorted fruits and veggies. i bring a lot of fresh fruit and vegetables to snack on (chopped carrots, cucumbers, red pepper, tomatoes, apples). it depends largely on what is in season and what came in my csa share.
    now that apples are enjoying their glory, a sandwich of my yummy locally baked bread, hummus, apple slices and cheddar cheese is very satisfying…

  12. I have two favorite lunches, both made in bulk for a week of family lunches.
    Lunch 1:
    Couscous salad. Make couscous, douse in really high quality olive oil. Add basil, oregano and salt. Throw in large chunks of cucumbers, cherry tomatoes, chunks of feta, and kalamata olives. YUM!
    Lunch 2:
    Pasta salad. Make penne pasta. Throw in whatever you have handy. My favorite combo is chicken, olives, artichokes, sugar snap peas, tomatoes, and feta. Cover in a really tasty dressing. I like a slightly sweet wholegrain mustard one. Double yum!

    My fav lunch is some version of the Mexican Topopo salad: beans & cold leftover meat on a tostada shell, topped with a mound of shredded lettuce, slices of all different kinds of veggies, and topped with about half a juiced lime & kosher salt. If I’m rich that week I’ll have avocado with it!

    Wash it down with an iced tea, and you have a happy jewelry designer on your hands :)

  14. I have a nice selection of reusable containers and bags that are great for lunches and my husband and I recently found some super cute lunchboxes that have a separate compartment for silverware and tiny salt and pepper shakers!
    I mainly pack leftovers with some fruit/veggies and a granola bar. My husband makes sandwiches on homemade bread, packs homemade tortilla chips, and a piece of fruit. We freeze reusable water bottles to keep the lunches cool and provide icy cold water to drink at lunch time.

  15. Hmmm… I typically pack up whatever we had the night before for dinner. My favorite thing recently was the leftover chicken and beef schwarma from our dinner out at a local Lebanese place. I wish I had remembered to bring the hummus though. :(

  16. I have two favorite lunches:
    1. Homemade hummus and baba ghanouj with bell peppers, cucumbers, carrots, and crackers; a side of yogurt with homemade granola.

    2. Leftover soup of any kind, but especially tortilla chicken soup with chips and cheese.
