Stuffed Zucchini with a Twist

We get serious quite a bit around here, so when I stumble across something that’s fun or funny, I like to share it here to lighten the mood a bit. This Instructables video on how to make stuffed zucchini using power tools fit the bill perfectly!

A few notes about this video:

  • I might try substituting brown rice for the white rice that this calls for, but I’m not sure how that would work. White rice uses less water to cook than brown (white rice is 1 part rice : 1 part water, brown rice is 1:2), so there might not be enough liquid in the zucchini to cook the rice. You could also try other grains, like quinoa
  • He includes coriander leaves, which here in the U.S. is cilantro.
  • Please be so careful! Watching him drill this zucchini triggered my inner mom, and I don’t want this recipe to end with you in the emergency room!

I don’t think I’ve ever made stuffed zucchini, but this recipe looks like it would be fun to try! Have you guys done any cooking with power tools or seen other extreme cooking out there? I’d love to hear about it in the comments!

  1. This sounds like fun! But for those of us who don’t have access to power tools – I wonder if cutting the courgette in half, then using an apple corer, cutting into the open end, would work?
    It’s such a neat idea, getting the rice cooked within the vegetable.
