Strawberry Almond Salad

berryI’ve been in a salad mood lately and have been trying to get creative with my produce combinations. Strawberries are not new to salads, but you should still definitely check this recipe out!

A friend of mine came over the other day and said she had recently eaten a strawberry salad at a chain restaurant. We decided to attempt to re-create this salad, even one-up it. Here is what we used:

  • Baby romaine lettuce
  • Quartered strawberries
  • toasted (unsalted) almonds
  • Feta cheese
  • Sliced cucumber
  • Diced tomato
  • Poppyseed dressing

This combination is spectacular. The strawberries add sweetness, almonds add crunch and rich fatty flavor. The feta cheese adds saltiness where almonds are lacking. The cucumbers add perfect fresh crunch.

Later after eating this, for the third day in a row–I was hooked, I was brainstorming other toppings to add:

  • Mandarin slices
  • Fresh basil
  • Homemade pita chips/croutons
  • Sunflower seeds
