Another pureed soup! This time, sweet potatoes lend the creamy texture without a drop of dairy in sight.
3. Kale Soup with White Beans and Caramelized Onions
This chunky, hearty soup is a delicious one-pot meal! Serve with a side of garlic bread, and you are in business.
4. Coconut Pumpkin Black Bean Soup
Can you tell that I love a creamy soup? This time coconut milk does the heavy lifting. This is one of my favorite vegan soup recipes ever.
5. Vegan Cream of Mushroom Soup
This soup made me so happy when Yara Shoemaker shared it last October for World Vegetarian Month. I used to love cream of mushroom, and her vegan version is delicious!
