Quick and Easy Lunch: Pita with Hummus, Spinach and Basil

Make your own hummus

You can of course buy premade hummus, but it can be quite expensive.  If you make it yourself, you’ll save some money and know exactly what you are putting into in. Hummus should be made with olive oil, and many commercial varieties are not, so they don’t taste quite as good.  Here is a quick recipe; it’s so easy, you barely need to call it a recipe:

What you’ll need:

  • Cooked chickpeas, 2 cups
  • Tahini, 1/4 cup (you can usually find this by the peanut butter)
  • Lemon juice, 3 tbsps (fresh squeezed is best, one juicy lemon should do it)
  • Olive oil, 1/8 to 1/4 cups of olive oil
  • Garlic, 1 clove, chopped
  • Salt

Combine all items, except for only 1/8 of cup of olive oil, in food processor. Blend until creamy and smooth. You may need to add more olive oil if it is having trouble blending. Salt to taste. Place in bowl and make a well in the hummus and pour remaining olive oil in the well if desired.
