I’m addicted to hummus with veggies and pita. I’ve eaten it nearly everyday for the past 6 months for lunch. This is for three reasons: it’s yummy, it’s healthy, it’s easy. I won’t say I’m bored with it, but I am looking for a bit of variety, and I am came up with this ‘sandwich’.
The ‘sandwich’
What you’ll need:
- Pita, or flatbread
- Hummus (see how to make your own on the next page)
- Baby spinach, approximately 1 cup
- Fresh basil, about 3-5 large leaves
- Veggies of your choice (I like red peppers)
- Olive oil, optional
- Vinegar, optional
Slather a thick layer of hummus onto the pita bread or flatbread, top with the spinach, basil and some veggies. I like to make a salad first by mixing a bit of olive oil and vinegar with the veggies, then putting it on top of the hummus covered bread.
