Pomi Tomatoes: A BPA Free Alternative to Cans

One note: I’m trying to cut back on my salt intake, so there is no added salt in this recipe. If salt isn’t an issue for you, you can add 1t to the recipe below.

Low Fat Summer Stew

1 large eggplant, cut into 1″ cubes
1 large zucchini, chopped
1 onion, diced
4 cloves garlic, minced
1/2c water or vegetable broth
1 can white beans
1 26oz box of Pomi tomatoes

Toss everything into your crock pot on high, and cook for 2 hours or until the eggplant is softened.

I served this over mashed potatoes, but it would be great on its own or over rice or pasta!
