Although the farmers market here in central Illinois doesn’t start until May, I’m lucky enough to have access to produce from local farms year-round. One of my favorite farms even offers weekly pick-ups of fresh produce January through May.
Last weekend was a most exciting one because that farm was selling the first salad mix of the season. And there’s nothing I like better for dinner than a huge salad! Normally I would just improvise, but with something as special as the spring’s first baby greens, I like to follow a recipe. Here are some of my favorites:
