It’s election day—the day when Americans celebrate freedom and democracy by choosing our next leaders. So, while you watch the pundits pour over the results at your election day party, why not pour yourself a glass of lemonade or a cold beer and whip up a down-home vegan meal that’s as American as baseball: Barackoli Obama Casserole, Mittloaf Romney, Joe Apple Pieden, and Paul Fryan Potatoes!
Barackoli Obama Casserole
Makes 6 servings; adapted from Yummly
- 2 cups broccoli, cut into bite-size pieces
- 2 cups cauliflower, cut into bite-size pieces
- 2 cups rice milk
- 1/4 cup canola oil
- 1/4 cup flour
- 2 Tbsp. nutritional yeast flakes
- 1 tsp. salt
- 1/4 tsp. nutmeg
- 3/4 cup dried bread crumbs
- 1/2 cup shredded vegan cheese
- 3/4 Tbsp. paprika
- 3/4 Tbsp. dried parsley
- Preheat the oven to 400°F.
- Boil the broccoli and cauliflower in water for 3 minutes, then drain and set aside.
- Blend the rice milk, oil, flour, nutritional yeast flakes, salt, and nutmeg together until smooth. Place in a saucepan and cook over medium heat, stirring well, until thickened. Turn off the heat and add the broccoli and cauliflower, stirring until combined.
- Pour into a greased 8-inch-by-8-inch casserole dish. Sprinkle the bread crumbs, vegan cheese, paprika, and parsley over the top. Bake for 10 minutes.

- 1 medium onion, diced
- 1/2 green pepper, diced (optional)
- 3 Tbsp. vegetable oil
- 2 pkg. beef-flavor Gimme Lean Beef
- 1/4 cup uncooked oatmeal
- 2 slices white bread, crumbled
- 3 Tbsp. ketchup
- 2 tsp. garlic salt
- 1 tsp. pepper
- 1/4 cup ketchup
- 1/4 cup brown sugar
- 1/2 tsp. dry mustard
- 1/2 tsp. nutmeg
- Sauté the onion and green pepper in the oil over medium heat until soft. Combine in a bowl with the ground beef alternative, oatmeal, bread, ketchup, garlic salt, and pepper. Thoroughly mix with a spoon or your hands.
- Press the mixture into an oiled loaf pan. Cover with foil and bake at 375°F for 30 minutes.
- Mix together the ingredients for the coating and set aside.
- Remove the loaf from the oven and turn out onto a baking sheet. Spread the coating over the entire loaf. Cook, uncovered, for another 15 minutes.
Joe Apple Pieden
Makes 8 servings; adapted from PETA.org
- 2 cups unbleached all-purpose flour
- 1 tsp. salt
- 1/4 cup cold water
- 3/4 cup solid vegetable shortening
- 1 3/4 lbs. Golden Delicious apples, thinly sliced
- 1 3/4 lbs. Granny Smith apples, thinly sliced
- 3/4 cup sugar
- 1 tsp. fresh lemon juice
- 1/2 tsp. vanilla extract
- 1/2 tsp. ground cinnamon
- 1 Tbsp. unbleached flour
- 3 Tbsp. vegan margarine, diced (try Earth Balance brand)
- 1 Tbsp. soy milk
- 1 Tbsp. Florida Crystals sugar
- Large pinch ground cinnamon
- In a bowl, combine the flour and the salt. Mix the water with 1/3 cup of the flour mixture to make a paste. Set aside.
- With a pastry cutter or a fork, cut the vegetable shortening into the remaining flour mixture until the texture is “pebbly.” Add the paste and mix well. Shape into a ball and divide into 2 parts.
- Lightly flour a clean countertop and rolling pin. Roll 1 portion of the dough at a time. Roll from the center out, lifting the roller at the end of the dough (rather than rolling back and forth). Roll to a 1/8-inch thickness.
- Have an 8- or 9-inch pie pan ready. The rolled dough should be at least 2 inches larger than your pie pan. Loosen from the rolling surface, fold in half, and place in the center of the pie pan. Unfold and gently work into the pan, pressing lightly. Trim any excess dough with a knife.
- Preheat the oven to 400°F.
- In a large bowl, combine the apples, sugar, lemon juice, vanilla extract, and cinnamon. Let stand for approximately 15 minutes, or until juices form. Add the flour and mix.
Assembling the Pie
- Spoon the filling into the bottom crust and dot with the margarine.
- Roll out the second ball of dough to form a 13-inch round circle. Drape over the filling.
- Seal the top and bottom crust edges together and trim any excess dough, leaving a 1/2-inch overhang. Fold under and crimp decoratively with a greased fork.
- Brush the pie with the soy milk. Combine the sugar and the cinnamon in a small bowl and sprinkle over the pie.
- Transfer to a baking sheet and place in the oven.
- Immediately reduce the temperature to 375°F. Bake for approximately 2 hours, or until the crust is golden brown, the apples are tender, and the filling is thick and bubbling. If the edges are browning too quickly, cover with foil.
- Serve warm or at room temperature.
Paul Fryan Potatoes
Makes 6 servings; adapted from Savvy Vegetarian
- 4 Yukon Gold potatoes, peeled and cut into bite-size pieces
- 2 Tbsp. vegetable oil, plus more as needed
- 1 medium-size carrot, peeled and cut into small pieces
- 1/2 small onion, finely chopped
- 1 stalk celery, finely chopped
- 1/4 bell pepper, diced
- 2 garlic cloves, minced
- Salt and pepper, to taste
- Combine the potatoes and oil in a large, heavy frying pan. Cook over medium heat, turning every few minutes, until each side begins to brown.
- Add the carrots and continue stirring and turning for five minutes.
- Add the onions, celery, bell pepper, and garlic and continue stirring and turning.
- Add more oil, if needed, and the salt and pepper to taste. Continue cooking until the potatoes are nicely browned and tender and the onions are translucent and slightly browned. Serve immediately.
