The end of the summer is rounding out, well it is in Michigan anyway. Our gardening season will be over in a couple months and to help finish us out is the fantastic eggplant.
Eggplant is a beautiful summer plant that is typically in season from July to October (weather depending.) Eggplant prefers a lengthy warm season (so Michigan is not a candidate for a long eggplant season.) The eggplant plant grows much like that of a bell pepper, but needs a little more spacing. The edible varieties take anywhere from 60 to 90 days to be cultivated.
You may not have a garden and may need to find the perfect eggplant at the fruit market. When looking for one to purchase, be sure it has a shiny exterior and is free of blemishes. It should feel fairly firm and dense. The green leaves on top should be bright green and not wilted. Choosing a perfectly ripe eggplant will help create better tasting eggplant recipes.
The Nutrition Facts
Eggplants are highest in potassium and manganese. Potassium is a mineral important for cell function in our bodies. It’s main function is as an electrolyte that plays a key role in heart function. Without potassium our hearts would stop. Eggplant has about 10% of the daily recommended amount of potassium in each 1 cup serving. Manganese is also a mineral and eggplant has about 8% of the daily value in each one cup serving. Manganese is involved with antioxidant enzymes in the body, helping to fight cancer.
