Vegan Recipes for Mother’s Day Brunch

Mother’s Day in the UK is coming up next weekend, and if you’re lucky enough to live near your mom, treating her to a home cooked, cruelty free brunch is a great way to share the love! Here are some vegan recipes to get you going.

This menu for a simple, tasty Mother’s Day brunch serves four, The best part: you can put all of these vegan recipes together in advance, so you can spend time with mom instead of in the kitchen!

Simple Springtime Salad

I feel like a salad always starts brunch off right. Now that the weather’s warming up, you can take advantage of some of that warm weather produce to make a simple, delicious Mother’s Day salad!


  • 4c fresh spinach, chopped
  • 1c fresh strawberries, halved with the stems removed
  • 1c toasted walnuts
  • 1/4c olive oil
  • 2T balsamic vinegar
  • 1t herbes de Provence
  • salt and pepper to taste

Cooking Directions

  1. Toss the spinach, strawberries, and walnuts in a bowl.

  2. In a separate bowl, whisk together the oil, vinegar, herbes, salt, and pepper.

  3. Pass the dressing alongside the salad.

Vegan Broccoli Quiche

To keep things simple this Mother’s Day, go with a store bought vegan pie crust. If you can’t find one, try this no fail vegan pie crust recipe.


  • 1 vegan pie crust, preferable whole wheat
  • 1 block soft silken tofu
  • 2T nutritional yeast
  • 1/2t tumeric
  • 1t Italian seasoning
  • 1/2t salt
  • 2 cloves of garlic, minced
  • 2T olive oil
  • 1 1/2c frozen broccoli, defrosted

Cooking Directions

  1. Preheat the oven to 350.

  2. Place everything but the broccoli and pie crust into a blender or food processor, and whizz until it’s smooth. Transfer it to a bowl and mix in the broccoli.

  3. Spoon the broccoli mixture into your pie crust, and bake for 20 to 30 minutes, until the tops start to brown. Cool until you’re ready to serve!


Yield: 8 cocktails


  • 4c Persecco or champagne
  • 2c peach juice or peach puree


  1. Combine the ingredients in a large pitcher and chill. Serve with a sprig of mint to garnish! Bonus points if you grew the mint in your backyard or container garden!
