Have you been firing up the grill lately? If you’re getting sick of portobello mushrooms and potato salad, check out these vegan grilling recipes instead!
Now, don’t think that I’m knocking portobellos and potato salad. I love them both! But by mid-summer, I have eaten one or the other (or both!) at too many cookouts to count, and I’m ready to mix things up a bit. If you’re not used to vegan grilling, it might seem like a daunting menu-planning undertaking, but there are lots of simple and delicious vegan grilling recipes out there!
Instead of the old vegan standbys, I scoured YouTube for some cooking videos to help spice things up at my next cookout. Check out the tasty vegan grilling recipes that I found!
1. Potato Burger
Heather Nicholds from Healthy Vegan Recipes shares a fun twist on the traditional veggie burger: a potato burger! This cooks up quick and easy and looks delicious!
2. Grilled Avocado Salsa
Add a yummy smokiness to your next batch of salsa by grilling the avocados first. Jerry James Stone has a delicious recipe for grilled avocado salsa at Cooking Stoned.
3. Grilled Romaine Lettuce and Cauliflower Steaks
Grilled lettuce might sound a little bit crazy, but it’s so delicious! Just skip the cheese on these, and you’re good to go! You might just need a little extra drizzle of olive oil at the end to replace the oil from the cheese.
4. Savory Herbed Grilled Corn
Don’t you just love sweet, summer corn? Choose cobs that have bright green husks that are tightly wrapped around the cob. You also want to make sure you choose organic corn, so you’re not dishing up a pile of Monsanto’s GMO sweet corn inadvertently.
5. Perfect Grilled Potato
Now here’s a great alternative to potato salad! Check out the video above and grill up beautiful, crispy potato wedges. Y-U-M!
