Eating Vegan: Fruit and Vegetable Stir Fry

This is an easy, week-night dinner dish, and it’s versatile to boot. You can serve over your favorite grain – I recommend rice, noodles or cous-cous.

Ingredients:
1 large onion, chunked
1 red pepper, chunked
2 stalks of celery, cut thickly
2 large carrots, cut thickly
5 or 6 mushrooms, cut thickly
1 small can of diced pineapple in its own juice – drain and reserve the juice
1 small can of Mandarin oranges in light syrup – drain and reserve the syrup
8 or 9 pitted dates cut in half
3 large garlic cloves chopped
1/4t of ground cloves

In a wok, heat vegetable or canola oil.

Add the vegetables one by one stir frying, but keep them on the crisp side.
Add the dates and stir in with the vegetables.
Add the garlic.
Add the pineapple.
Add a few tablespoons of the pineapple juice and orange syrup.
Add the oranges last, as they tend to break up easily.
Add the cloves, then stir the mixture just a bit more and serve over the grain of your choice.
