The Healing Dish: Shiitake Mushrooms and Organic Baby Bok Choy
Posted in:

Shown here is a simple organic baby bok choy dish with fresh local shiitakes I was lucky enough to find at the farmer’s market last weekend. Shiitake mushroom happens to be a well studied, potent healing medicinal super food known in the orient for many millennia. If you can’t find them at your local organic farmer’s market stand, then there are plenty of organic growing kits online. Shiitake is known to be a:
- Kidney and Liver Supporter
- Cholesterol Reducer
- Libido Booster
- Adaptagen
- Immune Enhancer
- & Antiviral

Botanical Preservation Corps (which sells shiitake supplements) explains that the primary polysaccharide in shitake is called lentinan, which is an internationally prescribed anticancer drug. Also, according to Wikipedia, extracts from shiitake mushrooms have been researched for “many other immunological benefits, ranging from anti-viral properties to possible treatments for severe allergies, as well as arthritis.”
In this dish I mixed the shiitake with organic baby bok choy, a dash of organic soy, and garlic. Bok choy is a type of Chinese cabbage green also known for centuries for it’s medicinal properties.
