Tofu Coconut Curry

Ingredients

  • ¾ C garbanzo beans
  • 3 oz tofu
  • 1 bell pepper, chopped
  • ¼ large onion, chopped
  • /2 tsp coconut oil
  • ½ C coconut milk
  • Curry powder
  • Dried basil

Directions

  1. Combine coconut milk. curry powder, and dried basil in a medium saucepan and bring to a boil.
  2. Add garbanzo beans and tofu and reduce heat to a simmer.
  3. In a separate pan, stir fry bell pepper and onion in coconut oil until tender.
  4. Add vegetable to curry mixture and continue to let simmer for 1-2 hours.

    The recipe sounds interesting. I don’t think I would every have a combination of coconut and tofu together in curry. I wonder how this would taste like.
