Whole Herb Roasted Branzino Recipe

Ingredients

  • 1 Branzino
  • 1 tsp. Rosemary
  • 1 tsp. Thyme
  • 2 tsp. Oregano
  • 3 gloves garlic (minced)
  • 1 1/2 tsp. salt
  • Pepper (to taste)
  • 4 tbsp. olive oil
  • 1/2 lemon (sliced thin)

Cooking Directions

  1. Preheat the oven to 450 degrees. With a sharp knife, cut the fish four times from the top down, starting just behind the gills going towards the tail; leaving about an inch between each cut and an inch from the bottom of the fish.
  2. Combine the herbs with garlic, salt and pepper. The herb mixture and olive oil will create a paste which can be rubbed on the entire outer and inner surface of the fish.
  3. Once the herb and olive oil combination has covered the fish, insert the 4 thin slices of lemon inside the cavity of the fish and place the fish in the oven. Let roast for just about a half an hour.
  4. Serve this fresh and healthy meal with a salad or sauteed vegetables.
