Kale Salad with Roasted Vegetables
Andrea at our sister site Vibrant Wellness Journal shared her first video recipe yesterday – a yummy kale salad – and we are thrilled to share it here with you guys!
The recipe is for a raw kale salad with roasted vegetables. The salad isn’t 100 percent raw, but she leaves the kale raw, which is a great way to get the maximum amount of nutrients from this tasty superfood! All that you need to make your kale salad are:
- 1 cup carrots
- 1 cup parsnips
- 1/2 cup leeks
- 1 tablespoon of olive oil
- Salt and pepper to taste
- 1 bunch of fresh kale
- 1/2 cup sunflower seeds (she says sesame seeds in the video by mistake, and I bet those would be delicious in this salad, if you’d like to try them out!)
- your favorite salad dressing
