We rode out to Mills Farm just outside of Athens to pick up organic corn grits and corn flour, and I got to have a really nice chat with Alice Mills, who runs the farm with her husband Tim. She told me a story that sort of blew my mind, and I just think it’s an amazing example of the power of community.
This isn’t the type of pie with a crust, it’s vegetables made into a pie shape. It turned out so well with the beet, sweet potato and parsnip I used, but you can make this dish with any variety of veggies. Zucchini, carrots, celery root, jerusalem artichokes or any other grate-able vegetable would be perfect for this dish.
The Food and Drug Administration is asking for comments about reducing sodium consumption. Let them know what you think by January 27, 2012.
