
It’s difficult to cook for my family these days. My teenage athletes need their proteins and carbs while my husband is on “all protein and a tad bit of carb” diet. He is trying to lose weight while my kids are trying to gain muscle mass. It literally takes me two hours to figure out what to cook for dinner sometimes. I sometimes wish we could just ‘drink’ our meals.
So when I heard about this documentary, “Fat Sick and Nearly Dead“, I was intrigued. Not only because of the title but because what Joe Cross did to lose weight.
Cross drank juice for 60 days to get his health back, and this film chronicles his journey across 3000 miles to do just that.

100 pounds overweight, loaded up on steroids and suffering from a debilitating autoimmune disease, Joe Cross is at the end of his rope and the end of his hope. In the mirror he saw a 310 lb man whose gut was bigger than a beach ball and a path laid out before him that wouldn’t end well- with one foot already in the grave, the other wasn’t far behind. FAT, SICK & NEARLY DEAD is an inspiring film that chronicles Joe’s personal mission to regain his health.

While I don’t believe juicing to lose weight, never mind as main meals, is for everyone and you should definitely check with your doctor first before starting any new diet programs, I think everyone should drink fruit/veggie juice daily to get some healthy doses of fruits and vegetables in their system.
So I came up with this fruit-veggie juice for my family as their post work-out drink and while it quenches their thirst, they are getting some of the daily servings of fruit and vegetables in one big gulp. Well, maybe a few gulps in my son’s case.
Veggie Juice Recipe
Yield: Four 8oz. glasses
Ingredients
- 4 Med sized ripe tomatoes
- 2 celery stalks
- 2 carrots
- 1 Orange (wedges) or Apple (cored but unpeeled)
- 1 Lemon (skinned wedges)
- 1 Lime (skinned wedges)
- Berries (optional)
- 1 Tbsp Hot sauce (optional but strongly recommended)
- 2 Tbsp Omega 3 Oil from flax seeds
- 1 C Cold Water
Cooking Directions
- Puree everything together in a blender.
- Add water if you want the juice to be thinner.
The important thing is to use a blender and not a juicer as in the trailer. Why throw away all that nutritious fiber that gets extruded from a juicer? Not that I am endorsing any particular brand of blender, but I love my Vita Mix blender. It is powerful and blends anything!

This documentary was very inspiring. Not that there is anything wrong with blending your ingredients instead, but there is a reason a juicer is great. Your body absorbs many of the vitamins and nutrients from juice that it wouldn’t from solid (or blended) material. Since your body doesn’t need to work as hard to digest the solids these valuable nutrients are more easily absorbed. On top of that, you are able to consume a significant amount more of the nutrients from the juice per meal/day because the yield of juice you get from a whole platter full of fruits and veggies is much more than you would eat whole. (i.e. 24 Oz drink could contain 5 apples, 4 carrots, 2 cucumbers and a piece of Ginger, yummy recipe by the way) Glad to hear there are others that were inspired as much as me! Hope all goes well for everyone working to better their eating habits.

on a Monday & on Saturday morning, I had
already lost 18lbs & I haven’t even completed
the week yet! I am so excited & I feel great!
I lost 20lbs and got on a plateau I could not get off of. My boss started juicing and losing, so I started, too. I am lossing again, but I feel terrific and have great energy.
That’s great!! I think the added benefit of being energized with juicing is more the reason to start!

I think that this is a wonderful blog. Juicing is very healthy for you. I found that the movie was inspiring and yes, cooking for teens is difficult these days but it sounds like that you have a very healthy family and you should be proud of that! It’s so scary how many over weight people there are in the world today. Thanks for taking time to share the recipe
