

RAW LOVE TART: Just something to say, “I love you.”
CRUST:
1/2 c almonds, ground
pinch of salt
4 dates
1 T coconut nectar (agave nectar, honey, or maple syrup)
FILLING:
6 dates
3 T coconut water
2 T cashews
1.5 t cocoa
6 almonds, for garnish

start with three of these little guys.

next, take your almonds and grind in food processor until you have small chunks.

add all other ingredients for the crust into processor and process until its becomes mealy and sticky.
dough should stick together when clumped.

very important!! line the tart shells with plastic wrap so they will be easy to pop out.

then press the dough into the tart shells.
Next make the filling by putting everything in the blender and blending until smooth.

pour and refrigerate for a couple of hours or overnight.

top with almonds.
enjoy.
















Yesterday – seriously – I was whining to myself about how I wanted some kind of chocolate dessert and currently am really tired of chocolate tofu mousse. The bakery was sounding better and better.
Then I see this. A little beacon of chocolate hope. I have everything except the dates. I’ll grab a few of those and make dessert.
