Vegan Sweet Potato Blondies
Yesterday I wrote a request for your favorite vegan cookie recipes and pointed you towards one of my favorites: gourmet carrot cookies.
Here’s another one of my favorite vegan cookie recipes. Well, actually it’s a blondie but close enough, eh? Click here for the recipe.
These vegan blondies have a lovely, spiced sweet potato flavor. They’re slightly crunchy on the outside and gooey on the inside.
I recommend using coconut milk for the nondairy milk – it goes perfect with the sweet potatoes! Canned sweet potato puree (unsweetened) is also a great substitute for fresh sweet potatoes.
