My favorite vegan, GMO free margarine is Earth Balance.  It works well with the many allergies and celiac in our family.  Because soy is among the eight most common allergens, Earth Balance now has a soy free spread and to get the word out we get to give some free coupons away.

Earth Balance Soy Free Spread is vegan, all natural, free of gluten, lactose and soy, has zero grams of transfat and is a great source of omega 3′s.

Here’s our favorite recipe for a gluten free, dairy free, vegan treat which everyone loves. We always bake with Earth Balance.  The best part is no one knows these goodies are healthy (sweet, yes… but also chock full of good stuff) unless you tell them!

Almond Butter Oaties

1/2 cup Earth Balance Soy Free Spread

2 cups Wholesome Sweetners Organic Fair Trade Evaporated Cane Sugar

1/2 cup organic light coconut milk

2 Tbs. Equal Exchange Fair Trade Cocoa Powder

1/2 cup MaraNatha Almond Butter

1 tsp vanilla

1 cup Bob’s Red Mill Gluten Free Oats

1 cup quinoa flakes

1/2 cup sunflower seeds or chopped almonds or peanuts

1/4 cup flax seeds

1/4 cup coconut

Place a large, heavy bottom pan on medium heat… melt Earth Balance spread, add sugar and coconut milk and mix well.  Add cocoa powder and continue to stir.  Increase heat and bring to a boil.  Allow to boil (while stirring) for exactly 1 minute.  Add almond butter and vanilla.  Continue to stir and bring back to a boil for one minute.  Add oats, quinoa, seeds/nuts and coconut.  Mix well.  Remove from heat.  Allow to sit in pan for a few minutes, then scoop by the spoonful onto parchment paper.  Cool until firm (about 1 hour).  Store in a sealed container and consume within a couple days.

Depending on what is in my kitchen at the time, I use more oats and skip quinoa (or vice versa) and substitute nuts/seeds or vary the amount.  Just make sure you use about 3 cups of dry ingredients.  If you can’t have nut butters then sub with Sunbutter.

    I love earth balance natural buttery spread. I, too, am excited about the non-soy version. This spread tastes good on everything. I am so happy that I found an allegy-free buttery spread that tastes so good – especially when you are allergic to so many things, wheat, gluten, cow’s milk, soy…What a find it is.

    I have been using Earth Balance since I was diagnosed with Crohn’s disease and was advised to stay away from dairy. My husband now likes the taste of it better than regular butter. My favorite recipe to use it in is my cream of mushroom soup. We top it over rice and chicken and bake it. Soooo good!!

    I love earth balance soy free spread and use it with all my spreads and all my cooking. My daughter ahs severe allergies and earth balance is one thing I do not have to worry about!

    My favorite way to use Earth Balance is in mashed potatoes. My family never minds not using milk-based butter when we have Earth Balance!

    I love using Earth Balance. I was hooked the first time I used it! The best way to use it is to simply toast up 2 slices of sprouted bread and then spread Earth Balance on it. Yum… My mouth is watering just thinking about it. I have a few other people hooked too!
