		<description>I recently travelled to California where I had to fly there and back.  I was so glad to have had the foresight to pack a healthy meal for myself!  Way better than the nutritionally worthless (and wastefully packaged) 100-calorie packs that Southwest offered.  

The rotis are a great idea for eating on the go.  I packed a burrito for both of my trips, which were similarly easy to eat and not (too) messy.</description>

Long before I even considered going meat-free (and now I&#039;m vegan), I spent the summer in Toronto with a Guyanese family and the food was incredible. I never even gave it much thought till much later how most of the food was vegan or easily made that way. Things such as &quot;Cook-Up&quot; rice made with coconut cream/milk, toms, onions, black-eyed peas, and spinach. So very yummy yet nutritious and inexpensive not to mention easy and quick requiring little effort.

On the day we all went to Niagara Falls, my friend put together a lunch for us to eat there which included roti and a filling much like the one in the recipe above. We ate it gathered around the trunk of the car, laughing and enjoying each others&#039; company (there was 6 of us). It was one of the best meals of my life and one I remember most fondly. The food was good and satisfying and my companions were wonderful.

I&#039;d add maybe some green beans and fresh diced tomatoes to this but otherwise it&#039;s much as I remember it and great to have that memory sparked.

If you want to make it more authentic Caribbean, add a habanero. Great flavor but a bit too hot for me. While my friends ate them not only cooked into the food but also as a garnish on the side I use Korean chile flakes (no seeds) when I make my own Caribbean inspired foods. Adds some nice heat and flavor without punishment.
