McCain gets no Victory Pancakes

For those of you living under a rock, Barack Obama has just won the US Presidential Election in a history-making two-to-one victory.

John McCain doesn’t look too happy about it…

If you’re ready to celebrate the morning after, some good old homemade pancakes made from scratch really fit the bill for a victory breakfast. These hotcakes will fill your belly and satisfy your palate. They’re easy, cheap to make, and as American as… well… Barack Obama.

Election Victory Pancakes:

  • 1 1/2 cups flour (whole wheat is my favorite)
  • 1 Tablespoon sugar (or honey or agave nectar)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 1/2 cups milk (or soymilk)
  • 2 Tablespoons olive oil (or your choice)
  • Optional – sliced banana, chocolate chips
  • oil for frying

First, preheat up your frying pan or griddle, adding a little oil. A hot pan is the key to great pancakes.

Mix the ingredients together, then whisk until smooth. When your pan is hot, pour 1/2 cup size portions one at a time. If you’re adding sliced bananas, place them onto the pancake as you cook the first side.

When bubbles rise to the surface all the way through to the middle, it’s ready to flip. Cook on the other side until golden brown. Cover with butter and maple syrup, or your favorite jam. I like peanut butter on mine (especially with the chocolate chips…).

Repeat until all the hungry voters are fed.

John McCain, you deserve some pancakes too.

    Sounds like a good heart healthy pancake idea. Now if we could cook up the ability to work together for a good recipe for a low-fat healthy economy using bipartisan cooperation, honesty, integrity and a dash of good humor, we’d really be cookin’!
