		<description>Used this as a &quot;base&quot; recipe - turned out great!  I didn&#039;t have a red onion, so used a spanish onion and some scallions that were in the fridge.  Also, used plain red wine vinegar.  It was delicious, and then I had the brainstorm to add a half-a-can of corn, and it got even better!</description>
