I love the golden beet and enjoy it grated into my Coleslaw with cabbage and carrots--a very colorful and tasty slaw salad with homemade mayonnaise. Delicious! I also grate golden beets onto my baby lettuces, raddichio and add 1/4 avacado for a good dose of healthy fat.

i love beets! i recently made pickled beets for the first time, and was ecstatic when they turned out well (i'd only ever bought them before). and roasted beets have to be one of the most divine and decadent treats on this here planet of ours, mmmmm!

They also cook well in a microwave. Cut the top and bottom off, put in a dish with about an inch of water in it, and zap for 10-20 min, checking frequently. I have only just gotten over a lifelong problem with microwave snobbery myself, so this was a revelation!

Beets are also delicious added to a crock pot of soup. They cook beautifully and add so much flavor and nutrition. The humble beet can be juiced to use as a natural food coloring or dye as well. It is a really handy veg to have on hand.
